Blueberry Mug Muffin That Tastes Like It’s Fresh From the Bakery

A quick and healthy blueberry mug muffin made with oat flour, fresh or frozen blueberries, and natural sweeteners. Ready in under 90 seconds.

Ingredients

3 tbsp oat flour

1/4 tsp baking powder

Pinch of cinnamon (optional)

1 tbsp maple syrup or mashed banana

2 tbsp almond milk (or any milk)

1/4 tsp vanilla extract

1 tbsp Greek yogurt (optional)

2 tbsp blueberries (fresh or frozen)

Instructions

1. In a microwave-safe mug, mix oat flour, baking powder, and cinnamon.

2. Add maple syrup, milk, vanilla, and yogurt. Stir until smooth.

3. Fold in the blueberries gently.

4. Microwave on high for 60–90 seconds.

5. Let cool for 1 minute before enjoying.

Notes

Don’t overmix the batter should be thick but not dry.

Use frozen blueberries without thawing.

Add lemon zest for extra flavor.

Top with sliced almonds or a dollop of yogurt.
