Description

Ingredients
1 cup full-fat cottage cheese (small curd)
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
¾ cup sugar
2 eggs
¼ cup neutral oil (canola or sunflower)
1 tsp vanilla extract
½ cup hot water or coffee
Instructions
1. Preheat oven to 350°F. Grease an 8-inch baking pan.
2. Whisk flour, cocoa, baking soda, and salt in a bowl.
3. In another bowl, mash cottage cheese lightly. Add sugar, eggs, oil, and vanilla.
4. Stir wet and dry ingredients together.
5. Add hot water or coffee. Mix gently.
6. Pour batter into pan and smooth the top.
7. Bake for 30–35 minutes, or until a toothpick comes out clean.
8. Cool fully before slicing.
Notes
For a deeper flavor, use coffee instead of water.
Pairs beautifully with whipped cream or berries.
Use full-fat cottage cheese for best texture.
